Spring is here and it's time for a new appetizer! Such a great way to enjoy fresh tomatoes, basil, and olives.
This is a delicious and nutritious version of a bruschetta. You can use pita's, toast, or even chips. Enjoy the recipe.
INGREDIENTS
Hummus
1 can chickpeas
2 - 4 Tablespoon lemon juice
Minced Rind from 1 lemon
1 Tablespoon soy sauce
1 Tablespoon tahini paste
3- 4 cloves chopped garlic
4 to 8 T water
Bruschetta Topping
1/2 cup chopped tomatoes
8 kalamata olives chopped
1/2 teaspoon chopped basil
1/2 teaspoon capers (optional)
1 Tablespoon balsamic vinegar
Small bread slices - toasted or pita chips
DIRECTIONS
Hummus
Put all ingredients in a blender, starting with just 4 tablespoons of water. Add additional water to get the thickness you desire.
Bruschetta Topping
Combine tomatoes, olives, basil and balsamic vinegar. Taste and adjust seasoning as desired.
Take toast or pita chips and spread a little hummus. Then, top with some of the bruschetta topping.
