Looking for a refreshing summer salad that is delicious just like it is or can be used to create Tacos, Buddha Bowls, and more.
I originally posted this video on the Plant Powered Payson FaceBook page and not on my blog. The feedback from the post in this recipe has been so amazing, that I decided to make a blog on it. It is such a simple but delicious combination and you can switch things up for your taste buds. Enjoy playing with this based recipe. PS. This is my first cooking video.

This salad is so simple and so delicious. It is become a staple in my refrigerator that allows me to make a quick meal or just add it to the salad.
Versatile Summer Salad ★★★★★ Source: Www.PlantPoweredPayson.com Ingredients 1 can (1½ cup) black beans 1 cup cooked brown rice ½ cup red bell peppers, diced ½ cup green onions, sliced ½ cup roasted corn (frozen works great) juice of 1 lime Directions Drain and rinse the canned black beans. Combine all ingredients and stir gently. If you’re going to store this for a few days, only put dressing on the amount you’re using today and this will keep it fresher and let you change it up.
This is a great base salad and now you’re ready to incorporate some special flavors. Here a few ideas of wonderful toppings that you may want to try. Chopped fruit of any kind, mangoes, strawberries, apples are just a few.
Cooked sweet potatoes, cooked broccoli, asparagus, cucumbers, hearts of palm, and artichokes are just a few. Seeds and nuts.
As for Dressings. A simple balsamic dressing, Salsas, ranch dressing, mango dressing, just lemon and lime juice, or a flavor balsamic of your choice. There are so many modifications that you can make to this base salad.
