Looking for a quick lunch! These only require you to prep and pan sautés the mushrooms. Everything else is just heat and assemble. The King Trumpet Mushroom has a wonderful light earthy flavor. Ingredients
1 King Trumpet Mushroom (makes 2 to 3 tostados) shredded
No Fat Refried Beans with Lime
Shredded Cabbage
Salsa of your Choice
Sliced Avacado
Corn Tortilla
Seasoning of Your Choice (I have used Trader Joes Chili Lime and Trader Joes Vegan Chicken Less Seasoning) both work great or you can just use salt and pepper.
Directions
Begin by shredding the King Trumpet Mushroom. Use a fork lengthwise, working your way around and the mushroom will shred. Put in a pre-heated non-stick pan on medium heat and season. Cover the pan and let the juices release. Then, uncover the pan, season and let the moisture evaporate and mushrooms lightly brown. (This is a great technique for no-oil cooking).
I like to air-fry the tostado until lightly brown. And heat up the refried beans.
Then, just assemble. Tortilla, beans, mushroom, cabbage, salsa, avocado slice. You can top it with cilantro and a squeeze of lime juice if you like. Enjoy!
